Shepherd's Pie (Cottage Pie)
What is more comforting than a rich casserole of meat, vegetables, and potatoes. Even the pickiest of eaters will come back for seconds.

Meat Vegetable Mixture
- 1 pound ground beef
- dried thyme
- 1 pinch salt and pepper
- 2 cloves fresh garlic minced
- 3 Tablespoons tomato sauce
- 2 Tablespoons Worcestershire sauce
- 1 Tablespoons gluten free all purpose flour optional
- 1 cup beef broth
- 2 cups frozen peas, carrots, green beans mixture
- 1 8.75 oz can corn
- 1 Tablespoon olive oil
Mashed Potatoes
- ⅓ cup light cream or milk
- 4 Tablespoons butter
- 3 large Russets or Yukon potatoes
- garlic powder to taste
- salt and pepper to taste
- 1 cup shredded cheddar cheese for topping casserole
Mashed potatoes
Peel and chop potatoes into quarters.
Place potatoes in a large pot of cold water and bring to a boil. Once boiling, boil for 15 minutes. Check that they can easily be pierced with fork.
Drain potatoes. In the same pot mash the potatoes and add butter, light cream or milk, garlic powder, and salt and pepper. Taste test to adjust the seasoning. Set aside mashed potatoes.
Meat Vegetable Mixture
In a large skillet, heat olive oil over medium heat. Brown the ground beef breaking it up into pieces. Season with salt pepper and dried thyme.
Once browned, Sprinkle gluten free flour on top. Add minced garlic, tomato sauce, and Worcestershire sauce and stir to combine.
Add beef broth and 2 cups of mixed vegetables (peas, carrots, green beans) and small can of corn. Stir the mixture for about 5 minutes until thickened and vegetables are heated. Taste test to adjust seasoning. Set aside.
Assembly of the Casserole
Preheat your oven to 400℉ (200℃).
In a 9x13 baking dish, put all of the meat vegetable mixture on the bottom.
Add all of the mashed potatoes on top of the meat mixture covering it completely. Use your fork to make grooves on the top . This helps it give a crunchy texture on top when finished. Bake for 20 minutes
After 20 minutes top with shredded cheddar cheese and broil for 5-10 minutes until it is crunchy on top. Watch it carefully to avoid burning.
