Grandma’s Greek Yogurt Tzatziki

GLUTEN FREE

My grandma’s greek yogurt tzatziki accompanies at least one of my meals every week. My beautiful grandma was a beast in the kitchen and whether she was making lemon potatoes, lamb or greek salad, it was always to die for. Every Christmas her food would be the first to go as everyone was left holding their bellies. Luckily, this greek yogurt tzatziki was a perfect salsa to lighten up the heavy meals as it is so refreshing.

It can be used as a dip for pita or vegetables, an accompaniment to just about any meat, or a dressing for a salad.

What ingredients are in Greek Yogurt Tzatziki?

  • plain Greek yogurt
  • garlic cloves minced
  • mint leaves
  • cucumber
  • fresh dill

How to make Greek Yogurt Tzatziki?

  1. Start by prepping the vegetables. Cut of the ends of the cucumber and peel off the outer skin. Cut lengthwise in half and scrape out the seeds. Then cut into strips and dice. This will reduce the water content significantly. No one wants watery, separated food.
  2. Mince garlic. I used my handy dandy garlic hand press. Finely chop the mint leaves and dill.
  3. Add yogurt to a serving bowl and mix in cucumber, garlic, mint, and dill. Stir well.
  4. Set in refrigerator for an hour and let the flavors merry together and get very cold.
  5. Garnish with mint and cucumber.

Optional Toppings

  • More diced cucumber
  • Crumbled feta
  • Red pepper flakes
  • Drizzle of high quality olive oil
  • another sprig of fresh dill

How to store tzatziki?

Store in an airtight container in the refrigerator for no more than 4 days. Because cucumbers can become watery, be sure to stir well before serving again.

What to serve with Greek Yogurt Tzatziki?

  • An assortment of raw vegetables: sliced carrots, cucumbers, radishes, celery, broccoli, cauliflower
  • Rice crackers or your favorite gluten free cracker
  • A sauce for grilled chicken or lamb
