While cooking fish intimidates a lot of people, this simple lemon dill salmon can be made by truly anyone successfully. Salmon is an easy option to whip up, yet it tastes like you slaved away in the kitchen all day. My kind of meal to be honest! Add a vegetable, starch and a glass of wine and date night will be looking really good.
What ingredients are in Simple Lemon Dill Salmon?
I like to use all fresh ingredients for this recipe. However, if you are short on time, feel free to use dried garlic and dill. Shake them onto the salmon fillets and generous season with salt and pepper. Drizzle with oil, top with a lemon, and put it into the oven. Voilà…dinner is ready!

How to make Simple Lemon Dill Salmon?
- Preheat the oven to 400°F (200°C)
- On a cutting board, zest the lemon and slice into thin rounds discarding the ends. Also, finely chop your fresh dill and minced your garlic.
- In a small bowl combine the olive oil, lemon zest, minced garlic, and fresh dill.
- Line a baking sheet with aluminum foil. Dry your salmon fillets with paper towels to absorbs as much moisture as possible.
- Sprinkle half of the salt on the aluminum foil where the fillets will be to help continue absorbing the moisture of the skin. Place the fillets on top of the sprinkled salt skin side down.
- With a silicone brush, paint the seasoned olive oil onto the fillets. You can also just pour it onto the fillets and massage with your hands.
- Top generously with salt and pepper and place 1-2 lemon slices on top of each fillet.
- Bake in the preheated oven for 14 minutes and then serve immediately
- Before eating, squeeze the cooked lemon onto the salmon and discard.

How to store the leftovers?
Cooked salmon can be stored in the refrigerator in an air tight container for 3 days. However, I prefer to make only the amount I will be eating in one sitting as I do not love reheated salmon.
What to serve with this Simple Lemon Dill Salmon?
I love to serve salmon with a starch such as rice or mashed potatoes along with a green vegetable (zucchini, green beans, aspargus). My favorite side vegetable to enjoy with this salmon is Sautéed Thyme Zucchini
This salmon also tastes great on top of a salad, such as a greek salad, or on top of a bed of roasted vegetables.
