Citrus Caprese Salad

This Citrus Caprese Salad is perfect for when you are short on time and looking for a fresh meal with lots of color and vitamins. This salad can be prepared in less than 10 minutes and tastes so bright. Can you taste bright? I think so with this salad. I often bring this to parties as the presentation is so beautiful.

What ingredients are in this Citrus Caprese Salad?

  • grapefruit. You can substitute with whatever citrus you like, however, the grapefruit in this salad is important to this dish and I would try to use it. If you do not like grapefruit, I would use blood oranges.
  • mandarin oranges. This can be substituted with regular oranges, Sumo oranges which are ugly on the outside yet so sweet on the inside.
  • tomato. I like to use roma tomatoes or heirloom.
  • mozzarella. Try to find a high quality mozzarella
  • arugula. This can be substituted with mixed greens.
  • extra virgin olive oil. Use a high quality olive oil whenever you are not using it for cooking. It is so important for the flavor when are using it as a dressing.

How to make Citrus Caprese Salad?

  1. Prepare grapefruit and mandarins by peeling and then cutting into thin slices. Once sliced cut the grapefruit edges a little further to make sure that most of the bitter pulp has been cut away
  2. Cut mozzarella and tomatoes into thin slices.
  3. In your favorite salad bowl, place a bed of arugula.
  4. Orange grapefruit, oranges, mozzarella, and tomatoes on top of arugula in a manner that sparks joy.
  5. Salt and pepper to taste.
  6. Drizzle a high quality olive oil on top before serving.
  7. Once tossed serve immediately.

How to store the salad?

This salad is best enjoyed immediately after preparation. You can leave off the dressing until ready to eat. I personally would not save this salad for leftovers after dressing it.
